Life: Let's Boil Eggs

When I started to learn how to boil eggs, I was in my late teens. I went through several of them and throwing them away. I couldn't get it quite right and most ended up soft-boiled. I wanted hard boiled eggs and just boiled them longer and longer until I thought they were like they were supposed to be and that was hard boiled with a slight green ring around the yellows.

We didn't have the many online venues we have now to look it up and do it. I asked my Momma, who told me the way she did it. However, something was missing, it was over hard-boiled, almost like the way I was doing it but a little harder. I asked some other people and they were not cooked enough; I don't like runny yolks when boiling my eggs. I do love dropped eggs though especially on toast, yum! I digressed and spent time frying them and scrambling them up to eat them.

After being a grown-up and in the workforce, especially this last year, eggs have been the topic of conversation on more than one occasion and I have heard several stories on how to make the perfect boiled eggs. My co-worker and a dear friend let me know how his wife always made perfect eggs and no one could beat her. I tried it her way and yes, they were yummy and no green ring. I pretty much cook mine this way now, but use more salt in the water so the whites don't foam out the side and a little variation in the timing.

I have not tried cooking them in a muffin pan. One co-worker swears by this method as the only method his wife uses. I can't remember every detail, but mainly it is to put eggs in a muffin pan, cook for half an hour at 350 degrees, and cool in ice water. Another method is steaming, I have not tried this either as I think you need a steamer; however, it is 8 minutes for hard boiled eggs and I don't recall the steps or temperature.

If someone were to ask me if I like deviled eggs, in general, I would answer no. Though, I had an acquaintance that made the best deviled eggs I have ever tasted in my life, I would beg her to make them at potlucks and she would always give me the first couple before setting them out. I have not since tasted any of that magnitude. I should've asked for the recipe 10 years ago, but I wanted it to be her thing. I didn't want to take that away from her. That was her specialty and I would let her revel in it. Now, I could kick myself, I want those deviled eggs so bad! In the meantime, I will continue to eat my yummy boiled eggs and maybe one day I will venture out and try my own deviled eggs recipe, or not.
