Recipe: Asparagus Tartlets

I saw an add on television the other night and they had a quiche in the background and I remembered my Mom used to make quiches when we were little. I just didn't care for them, though. They weren't terrible, they just weren't for me.

I was looking through some cookbooks on different variations of quiche and came across tartlets. They look almost the same and I think they cook faster, as well.

Some items you will need are milk, onions (if prefer), shredded cheese, tartlet shells, asparagus, and eggs.

Preheat oven to 350° F. Beat 3 eggs in a medium bowl until frothy. Add 1 cup milk and mix well. Add 1 cup shredded cheese, (1/4 cup onions if wish), and 1 1/2 cup of chopped asparagus tips, mix well.

Spoon the filling into 8 unbaked 1-ounce tartlet shells. Place shells about 3 inches apart on a baking sheet.

Bake for about 30 minutes, or until knife inserted in center comes out clean. Let stand for several minutes before serving.

Broccoli can be used as a great alternative to asparagus depending on the season.
