Recipe: Breakfast Burrito

Every time I see an ad on television for breakfast burritos or egg wraps, I always think of my one friend that practically eats them everyday. Either food chain, home made, or grilled in the eatery across the street, either way, he is eating one. I've watched them make them enough that I thought I could do them. So, in true fashion, I tried. They were good. I, personally, don't like the taste of egg and flour tortilla together, but still good nonetheless.

Some items you will need are shredded cheese, tortillas, salsa, oil, eggs, milk, salt, and pepper. If wanted, crumbled sausage or bacon can be added.

Heat 1 tablespoon oil in a skillet over medium-high heat.

Mix 6 eggs, 2 tablespoons milk, 1 teaspoon salt, and a 1/2 teaspoon pepper in a bowl. Pour into skillet.

Cook eggs without stirring or flipping until bottom and edges begin to set. Then, start stirring continually until just slightly set. Add 1 cup of shredded cheese and stir. If adding bacon or sausage, add now. Remove from heat.

Heat 3/4 cup salsa in a small pan over low heat until warm. Wrap 6 large tortillas in a slightly damp paper towel and then wrap in a clean kitchen towel. Microwave for 1 minute.

Divide egg mixture evenly among the tortillas by spreading filling down the center of each one. Top with two tablespoons of salsa. Fold 1 side of tortilla over filling; then, fold up bottom. Roll securely and serve while hot.
