Recipe: Buttery Omelet

Eggs are so yummy. So much can be done with them and they are very healthy. We eat different kinds daily and this is just one of the ways we eat them, buttery and fluffy.

Some items that are needed are eggs, oil, milk, cornstarch, cheese, butter, salt, and if preferred vegetables of choice.

Put 1 tablespoon of butter and 1 tablespoon of oil in a skillet on medium-high heat and melt. This would be the step to add in 1/2 cup of vegetables, if wanted. If vegetables are added, cook for about 5 minutes or until tender.

Mix 4 eggs, 1/4 cup milk, 1 teaspoon salt, and 1 teaspoon cornstarch in a bowl. Pour into skillet and reduce heat to medium-low. Cook without stirring or flipping. When the edges are set in about 2 minutes, cover skillet. Cook for about 3 minutes until the center is set. Remove cover and add either 2 slices of cheese cut into strips , or 1/3 cup shredded cheese. Cook until cheese begins to melt, which should be about 1 minute.

Slide omelet onto plate and fold in half. This can be cut into wedges or halves. Add some fruit, ham, or summer salad for a nice side.
