Recipe: Easy Burritos

I love burritos! OK, maybe not with egg in them, however cheese and beans, yes. This is a great easy quick meal that the whole family can help make. Or even, a line can be made and each person can do their one part and pass the burrito on down the line for the next person to add to it. Just a fun easy meal for the summer.

Some items needed are re-fried beans, tortillas, shredded cheese, onions, jalapenos, sour cream, salsa, shredded lettuce, and tomatoes.

Preheat oven to 350*F.

Of the 2 cans of 16 ounce re-fried beans, spread 1/4 cup down center of 12 tortillas. Evenly spread 2 cups of shredded cheese on top of the beans.

Fold up one side of the tortilla in towards the center and then fold up the bottom. Roll each tortilla into a tightly enclosed cylinder.

Arrange burritos seams side down in a large baking dish. Cover with foil and cook for about 15 minutes.

Take burritos out of the oven and top each one with various ingredients. If topping all burritos, then the amount needed is 1/2 cup chopped onions, 1/2 cup sliced jalapenos, 1/2 cup sour cream, 1/2 cup salsa, 1/2 cup shredded lettuce, 1/2 cup chopped tomato, and 1/2 cup shredded cheese.
