Recipe: Party Platter

It is that time of year again. Yes, the months of Summer. When everyone is enjoying the warmer temperatures and looking for easy no cook ideas to keep down on the heat in the house. There are more parties and get-together's outside and people don't want to spend all day in the kitchen. Party platters are a great way to do that and can be made ahead of time and kept in the refrigerator until needed.

Some items you will need are block cheese, prosciutto, salami, pancetta, capicolo, artichoke hearts, bell peppers, olives, cherry tomatoes, arugula, iceberg lettuce, and bread sticks.

Line the serving platter with approximately 4 to 8 leaves of arugula. Take 2 to 3 leaves of the iceberg lettuce and place in center of platter in a bowl shape.

Cut 4 ounces of block cheese either into cubes or rectangles and place in center of iceberg bowl. Cut 4 ounces of each meat into halves and roll up each piece and place on alternating sides of the platter.

Drain and rinse the 8 olives and 8 cherry tomatoes and place inside the iceberg bowl on each side of the cheese.

Drain 1- 6 ounce jar of artichoke hearts and place in between two of the meats.

Cut 2 roasted bell peppers into strips and place between two of the meats. Place 8 bread sticks either randomly or together on platter. Season with garlic salt and pepper to taste.
