Recipe: Stuffed Cherry Tomatoes

I thought after yesterday's recipe with the platter of party food that, maybe, there might be some leftover cherry tomatoes. If so, I have some good news. We are going to stuff them and make another meal out of them or add these right beside your platter to have another option at the party.

Some items needed are cherry tomatoes, lemon, cream cheese, parsley, basil, Parmesan cheese, minced garlic, feta cheese, and sunflower seeds.

Cut 1/4 inch off the top of 2 cups of cherry tomatoes. Scoop out the pulp and drain the tomatoes upside down on paper towels.

Beat 3 ounces of cream cheese, 2 tablespoons crumbled feta cheese, and 2 tablespoons lemon juice in a bowl until smooth.

Combine 1/4 cup grated Parmesan cheese, 1/4 cup cup sunflower seeds, 3/4 cup fresh parsley, 2 tablespoons dried basil, and 1 tablespoon of minced garlic in a blender and process until slightly chunky.

Add this mix to the cream cheese mixture and mix by hand. Spoon this complete mixture into a plastic sanwhich bag and cut off one small corner of the bag. Squeeze mixture into each tomato and refrigerate for about 2 hours covered.
