Recipe: Tomato Bread

My son is now an adult and in the Army. He tried many things growing up and one thing he tried was children's cooking class for a summer. He thought it was OK. He thought he would go in there and have full rein of the kitchen and make and do what he wanted. He soon learned it was not that way. They had recipes and all 20 kids were making the same thing. It was very structured. He finished up the summer class and didn't want to go back. His favorite recipe from the class, though, was what they called Tomato Bread; the kid version of Bruschetta.

The items needed for this recipe are tomatoes, Italian bread, minced garlic, olive oil, mozzarella cheese, and dried basil.

Preheat boiler. Broil 12 -  1/2 inch thick slices of Italian bread on each side until golden which is about a minute per side.

Brush 1 side of the bread with the olive oil and then rub 1/2 teaspoon of minced garlic on top of the oil for each piece.

Slice 2 tomatoes into 6 slices each. Pat dry the tomato slices and lay on top of the garlic. Take 1/2 teaspoon of dried basil and sprinkle over tomato.

Spread 1/2 pound of shredded mozzarella cheese over all the tomatoes and broil for 5 minutes.
