Recipe: Anise Seed Chicken Rub

This is a new one for me. I hadn't heard of this particular spice until recently. I still learn new and amazing things every day. I thought this was particularly interesting as my acquaintance swears by it now that she has little ones and is breast feeding. It is Anise Seed.

The oil inside the anise seed is called anethole. This essential oil can be used for nursing mothers to promote breast-milk production. Also, combining anise seed with water to drink can be very helpful in relieving runny noses in infants. As always, please remember, while adding spices into a diet can be a good thing, consult a physician if any questions or concerns should arise. Some spices alter medication, have side effects, or can cause an allergic reaction.

Some items needed are, anise seeds, black peppercorn, garlic, sugar, olive oil, and pineapple.

In a small grinder, blender, add 1 tablespoon anise seeds, 1 teaspoon black peppercorns, 1 1/2 teaspoon minced garlic, and 1 1/2 teaspoon sugar. Grind until mixed well.

Remove mixture from grinder and mix with 3 tablespoons of olive oil in a medium bowl.

Blend 1- 12 ounce can of cut pineapple until smooth. Pour blended pineapples into mixture and stir.

Split mixture evenly into 2 gallon sized ziploc bags and add 3 chicken breast to each bag. Shake bag and coat chicken. Place in refrigerator to marinate.

If would like to make it more of a rub for the grill, remove the pineapple from the recipe and add mixture to chicken and grill accordingly.
