Recipe: Artichoke Spread

Artichokes are one of those things that I didn't pick up on until later in life. I love them. I believe my niece is allergic to them. I am unsure where she got that from, but thank goodness, not from me. I love the artichoke dips, fried artichokes, or any type really. They are definitely something I am glad I found when I was older. This recipe is for easy sandwich halves for parties, appetizers, snack, lunch, or any occasion.

Some items needed are artichoke hearts, mayonnaise, lemon juice, Parmesan cheese, and cocktail size pumpernickel bread.

Preheat broiler.

Drain and cut 1 - 14 ounce can of artichoke hearts into chunks.

In a bowl, combine artichoke hearts, 1/2 cup of mayonnaise, 1/2 cup of grated Parmesan cheese, and a squirt of lemon juice and mix well.

Spread the mixture on each slice of bread in a loaf of cocktail sized pumpernickel bread and arrange on baking sheet.

Broil the bread until mixture is slightly browned, about 5 minutes. Enjoy!
