Recipe: Asparagus Rolls

My Momma loved asparagus and prosciutto. Of course, growing up, it wasn't my favorite. However, as I have aged, I find it is not so bad and I can see why she liked having this tasty meal around.

Some items needed are, asparagus spears, Dijon mustard, and prosciutto.

Bring a large pot of water to a boil. Add about 25 spears of asparagus and return to a boil for 1 minute.

Drain asparagus and pour cold water over them to stop cooking.

Spread out the prosciutto slices and swipe a stripe of Dijon mustard down each piece of meat. If prefer, can spread Dijon on one side of prosciutto instead of one stripe down the middle.

Place asparagus spear on one end of the meat and roll tightly. Arrange on a serving platter and enjoy.
