Recipe: Egg Bake

Eggs are always a great any time meal. They are used so may ways and taste so scrumptious. Remember all those kids you had spend the night last night and are waking up hungry, again. This is a great meal to make when the first sound of a grumble is heard and gets everyone together before they go their separate ways and on with their day.

Some items needed are eggs, all-purpose flour, baking powder, salt, cottage cheese, shredded cheese, and butter.

Preheat oven to 350*F.

Grease a medium baking dish and set aside.

Whisk 8 large eggs in a bowl.

Add 1/2 cup all-purpose flour, 1 teaspoon baking powder, pinch of salt, 2 cups of cottage cheese, 16 ounces of shredded cheese, and 4 tablespoons of melted butter and mix well.

Pour egg mixture into the baking dish and bake for 40 minutes. Cool for 5 minutes and cut into squares and serve.

If still have the salsa, sour cream, or guacamole left over from the chips last night, this can be added as a great topper to the egg squares. Enjoy!
