Recipe: Bread of Vegetables

My Nana would make several versions of this with stale bread. She was never one to waste anything. That is a good trait to have, especially in today's world. She, also, loved eggplant. We could guarantee almost any vegetable anything would incorporate eggplant in it. Such as this recipe below, yes, it too shall have eggplant in it.

Some items needed are onion, garlic, olive oil, eggplant, zucchini, tomatoes, basil, oregano, and Italian bread.

Heat 3 tablespoons of olive oil in a skillet over medium heat. Add 2 tablespoons of minced garlic and 1 small chopped onion. Cook for about 5 minutes, until slightly tender.

Add 1 small chopped eggplant, 1 small chopped zucchini, 1- 14.5 ounce can of chopped tomatoes, 2 teaspoons of basil, and 2 teaspoon oregano in the skillet. Mix well and cover for about 25 minutes while stirring occassionally.

Preheat boiler. Broil 6 thick slices of Italian bread on both sides until golden; which is about 2 minutes per each side.

Remove from broiler and lightly brush with olive oil. Place bread slices on a serving tray.

Top each slice with the vegetable mixture and serve warm.
