Recipe: Rice Cereal Crispies

Looking for a quick snack that can be prepared and have in the fridge up to a week? Even one that can be made today and frozen for up to two months and just pull out and bake when needed? Then, this is the right place to find this little crispy goodness that can fulfill both those needs.

Some items needed are cheddar cheese, pepper jack cheese, rice cereal, sesame seeds, salt, flour, butter, and cayenne pepper.

Preheat oven to 350*F.

Mix 2 cups flour, pinch of salt, and 1/2 teaspoon of cayenne pepper in a medium bowl.

Cut in 2 sticks of sliced butter into the flour mixture until course crumbs form.

Add 6 ounces of shredded pepper jack cheese and 6 ounces of shredded cheddar cheese, 2 cups of rice crispies or a different rice cereal, and 1/4 cup sesame seeds to the crumb mixture and mix well.

Divide dough in half and shape each half into a log on wax/parchment paper. Slice dough into 1/2 inch discs.

Arrange slices on baking sheet and bake until firm and golden. This should take approx. 15 minutes.
