Recipe: Spiced Pumpkin Seeds

Pumpkin! Need I say more? Seriously, it's October and Autumn, and everything is good in the world. When the pumpkins are being decorated, save those seeds for these tasty snack morsels.

Some items needed are pumpkin seeds, egg whites, sugar, salt, chili powder, and butter.

Preheat oven to 325*F.

Spread 1 pound pumpkin seeds on a cookie sheet and toast for 10 minutes.

Using a mixer set at high speed, slowly mix together 2 egg whites, 1 cup sugar, pinch of salt, and 1/2 teaspoon chili powder. Stiff peaks should form after about five minutes, then done mixing.

Gently stir in the toasted pumpkin seeds to the egg mixture, ensuring to coat all of them.

Melt 4 tablespoons of butter on the baking sheet that was used earlier.

Spread the pumpkin seeds over the butter and bake again. Stir every 10 minutes for 30 minutes.

Serve warm or cool. Great snack to eat out by the fire with the cool fresh air dancing over the skin.
