Recipe: Spinach Squares

I loved spinach as a child. LOVE! That infamous Oprah commercial about her loving bread could've easily been me with spinach. Momma knew on my night to pick out the vegetable what it was going to be already. Sometimes, I would trick her and pick green beans, but not often.

I still love it, but differently now. I don't find myself eating it straight anymore. I like it mixed with other items whether cooked or in a salad. This is one of those recipes that I like and sharing with you.

Some items needed are spinach, sour cream, Parmesan cheese, eggs, flour, butter, salt, pepper, hot sauce.

Preheat oven to 350*F.

Cook 1- 10 ounce package of frozen chopped spinach (use package directions) and drain well. Squeeze out excess moisture by placing a smaller bowl on top on the spinach in the colander and press. A spoon or other item could be used, as well.

Grease a baking dish, preferably light colored or clear.

Combine spinach, 2 beaten eggs, 1 cup sour cream, 1/2 cup grated Parmesan cheese, 3 drops hot sauce, 1 tablespoon all purpose flour, 1 tablespoon butter, pinch of salt, and pinch of pepper in a large  bowl and mix well.

Pour mixture into baking dish and spread out evenly. Bake for 25 minutes; they will be firm.

Cool slightly and cut into squares, like brownies, but healthier. Serve warm.
