Recipe: Orange Hot Chocolate

I hear the wind blowing crazy outside and feel the crispness in the air. Officially, by the calendar, it's still Autumn. We all know that once Thanksgiving is over that it magically turns to Winter, at least in the North. We forget that Winter doesn't actually arrive until the end of December. Maybe, it's those snowflakes falling or the icy roads that gives way to Winter so early and cuts out Autumn's due time.

Whatever it may be outside, the inside can be nice and snugly with a fire going, a blanket wrapped around, and a warm cup of orange hot chocolate. Yes, orange as in the taste, not the color.

Some items needed are marshmallow fluff, sugar, cocoa, salt, milk, water, vanilla extract, orange extract or orange liqueur (over 21 version).

In a medium saucepan, stir together 1/2 cup of sugar, 1/4 cup cocoa, a dash of salt, and 1/3 cup hot water. Continue stirring constantly until comes to a boil. Stir for 2 minutes while boiling.

Turn down the heat to low to stop from boiling and add 4 cups milk and stir constantly.

Remove from heat and add 3/4 teaspoon vanilla extract and 1/2 teaspoon of orange extract OR 3 tablespoons orange liqueur. Beat with a whisk until frothy.

Serve with a dollop of marshmallow fluff on top.
