Recipe: Easy Chicken Pot Pie Wihout Crust

Yay! We made it through the holidays. Everyone back to the grind of everyday living. Families are back to their respective houses. The holiday weight is gone or close to it. All the returns and/or exchanges have been made. Ok, maybe that one was a little stretch, but soon.

 It's still cold outside and the snow and ice are still flying about everywhere. We need warm food to bring life to our bodies. How about a spin on an old classic?

Some items needed are frozen mixed vegetables, cream of chicken soup, chicken, milk, and an egg.

Preheat oven to 400° F.

Using a regular 9" glass oven safe dish, combine 2 cups frozen mixed vegetables, 1 cup cooked chicken that has been cut into chunks, and 1 can (regular size) condensed cream of chicken soup, and lightly stir.

Stir together 1 large egg and 1/2 cup of whole milk and pour over top of mixture. No stirring needed.

Bake for 30- 35 minutes.

Serve with biscuits for a nice twist on an old classic.
