Recipe: Granola To Go

We eat granola bars. Some are tasty and some are lackluster. Not that they don't taste OK, they just don't bring the taste buds alive. I've made chex mix before and that's always yummy. However, I was wondering if I could make a granola version instead of buying the bars. Where there's a will, there's a way. I may stick to buying them in the future, just out of convenience, but this was a fun activity and could definitely see doing this with my nieces and nephews when they are older.

Some items needed are rolled oats, chopped pecans, vanilla extract, chopped almonds, shredded coconut, molasses, brown sugar, water, vegetable oil, and two different colored raisins,

Preheat oven to 325° F. 

Spray a large shallow baking pan with non-stick oil. I like using the non-stick coconut oil. 

Combine 3 cups rolled oats, 3/4 cup chopped pecan, 3/4 cup chopped almonds, and 1/2 cup shredded coconut in greased pan. 

In a medium saucepan, combine 1 tablespoon vanilla extract, 1/2 cup molasses, 1/2 cup brown sugar, 1/4 cup water, and 3 tablespoons of vegetable oil. Bring to a boil on high heat and pour over the oat mixture.

Now, here comes bring a magazine or book to the kitchen with a chair to waste time for every five minutes, ha!

Bake the oat mixture for 20 minutes, while stirring every 5 minutes. 

Stir in 1/2 cup of one color raisin and 1/2 cup of another color raisin. I used Golden and a reddish color (didn't have a name or couldn't find it). Bake for 15 minutes longer while continuing to stir every 5 minutes. Then, remove from oven and cool.
