Recipe: Stuffed Red Potatoes

Potatoes! Show of hands, who doesn't like potatoes? OK, the one person in the back can put your hand down and play a game on your phone while we discuss potatoes. They are so yummy and so much can be done with these little gems from the earth. Not to mention, there are so many different kinds, as well. Who knew? Today, let's focus on the red potato.



Red potatoes provide a great source of fiber because the skin is consumed regardless of the preparation.The skin is where the majority of the fiber is located.

Some items needed are red potatoes, sour cream, black olives, softened butter, salt, and sliced Swiss cheese.

I love the microwave for potatoes. Some like the stove or oven. I will say two methods below for your choosing.

Microwave the potatoes by placing 10 red potatoes on a microwave safe plate. Pierce each one with a fork and sprinkle with water. Cover and cook on high for 10 minutes.

OR

Place potatoes in a large pan on the stove and add enough water to just cover them. Salt to taste. Bring to a boil and cook until tender. This takes approximately 20 minutes.

In a bowl, combine 1/2 cup sour cream, 1 tablespoon softened butter, and 5 tablespoons chopped black olives. Mix well, but not vigorous.

Cut each potato in half. 

Cut a small sliver from the bottom of each half potato so that it stands without falling over. 

Scoop a small amount of the insides from each half, about a teaspoon and half, and place inside the sour cream mixture.

Fold the potato pulp into the sour cream mixture and fill the potatoes with mixture.

Cut 4 slices of Swiss cheese into 6 squares and place a square on top of each stuffed potato. 

Serve them like the master chef that you are! These are so delicious and easy to make. Use them as a side dish or hors d'oeuvres.
